It’s a bird, it’s a plane...
The history of Publix’s Cake Tower

...nope, it’s just Publix’s birthday cake water tower, aka the “hydrocake.”
Yesterday was National Cake Day, so we thought we’d sink our teeth into the history of Lakeland’s most famous cake, built in 1982.
Although the hydrocake cake may look like it’s hovering in the air, it is one hefty construction. The tower scrapes the sky standing at 146 ft and 6 inches with three tiers and 11 candles that stand 8 ft-tall illuminating the night sky.
Composed of 2.25 million pounds of steel atop 170 cubic yds of concrete, the tower can provide 250,000 gallons of water per minute.
Each of the 10 candles symbolizes five years in Publix’s then 50-year history. The middle, 11th candle represents the company’s future. The candles add 1.37 tons to the tower’s weight at 250 lbs per candle.
